I was posting a random rhyme earlier about curry and wondered if anyone knew it was now more popular than fish and chips. This isn't an invitation to dannyc to hijack this thread but if anyone wants to post recipes or food suggestions or even wine/beer matches with certain types of food feel free. How about a nice pint of cider with a ploughmans lunch?

The recipe below was given to me by an Anglo-Indian lady I knew when I lived in Spain. It is an exceptional one. I do however like fish and chips but that would be a bit simpler than the curry
A PROPER CURRY
This is an authentic Sri Lankan Recipe that can be found be easily adjusted. Cut the fresh chillies in half to increase the chilli heat and add more coconut milk to tone it down.
Serve the curry with boiled basmati rice and a dish of mango chutney, sliced banana tossed in lemon juice, raiata ( made with chopped fresh mint and diced cucumber stirred through natural yogurt) , a pack of poppadums, and a tomato and onion sambel. To make the sambel, finely chop a large shallot or half a red onion, and mix with 5 – 6 chopped cherry tomatoes, a good squeeze of lemon juice and a sprinkle of cayenne pepper.
All the spices mentioned can be found under the Schwartz label in supermarkets
INGREDIENTS
Serves 4
4 chicken breasts
1 tbsp of virgin extra olive oil
2 large onions chopped
2 crushed garlic cloves
2.5cm of fresh chopped ginger
400gms tin of chopped tomatoes
1 – 2 fresh chillies left whole
Juice of one lime or half a lemon
A little coconut milk
Fresh coriander
For the spices, mix together 2 tsp of ground coriander, 1 tsp each ground cumin and garam masala, half a tsp each of turmeric and cayenne pepper.
METHOD
In a dry pan heat the spice mix for a few seconds. In another pan, soften the onions, garlic and ginger in the oil. The add the spices and cook for a minute or two. Add the chicken, tomatoes and the coconut milk. Cook for 20 minutes, adding a little stock if necessary. Serve scattered with fresh coriander leaves roughly chopped.
FINAL TIP FROM PETER add heated saffron to yellow the dish and add flavour

Nice 1 Peter, that seems easy enough and might give it a go.
My offering to his page is BBQ Spare ribs.
Steam the ribs for 90 minutes ( boiling is ok ) dont cheat on the time as the meat will not come off the bone if underdone.
Let it cool.
Trim any excess fat after the steaming, do not seperate the ribs before as the meat will shrink and you will end up with the bones sticking out.
Smother in your favourite BBQ sauce, ( i make mine copied from an applebees recipe ) and let it marinade for at least a few hours, best overnight in the fridge.
Then either 15 mins in the oven at gm 200 or a few minutes on the bbq to caramalise the sauce and voila.

I've got a tip for a mean lasagne, instead of the white cheese sauce use Marscapone cheese, gives it a sweet taste and it's easier to make,....

Hijacking the thread slightly, who are you top 3 chef's? We get BBC World News, Entertainment, Knowledge and LifeStyle over here, so get a good selection of cookery programmes. Its been nice to see a lot of them have been coming to Asia, Japan and even the US to see "proper" Asian cooking.
And Gav, yes the favourite meal or dish in the UK is actually Chicken Tikka Masala which is not a real recipe/dish in Indian cuisine

And Gav, yes the favourite meal or dish in the UK is actually Chicken Tikka Masala which is not a real recipe/dish in Indian cuisine We have a show on BBC1 on Saturday morning called "Saturday Kitchen" presented by James Martin, with guest chefs every week but with a section by Antonio Carluccio and another by Rick Stein. Antonio does mouthwatering italian cooking, but just recently Rick showed how to make a sweet Vietnamese curry which had my taste buds aroused.
